This easy, healthy recipe is great for breakfasts or school snacks!
- 3 cups flour
- 2 teaspoons baking soda
- Pinch of salt
- 2 teaspoons cinnamon
- ¼ teaspoon nutmeg
- 3 cups finely grated zucchini
- ⅔ cup vegetable oil
- 1 cup white sugar
- 2 eggs, beaten
- 2 teaspoons vanilla extract ½ cup semisweet chocolate chips

- Preheat the oven to 350°F.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, stir together zucchini, vegetable oil, white sugar, eggs, and vanilla extract.
- Add the flour mixture to the zucchini mixture and mix together until just combined. Stir in chocolate chips.
- Scoop into greased muffin tins and bake for about 20-25 minutes at 350°F.
