Zucchini Muffins

This easy, healthy recipe is great for breakfasts or school snacks!

  • 3 cups flour
  • 2 teaspoons baking soda
  • Pinch of salt
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • 3 cups finely grated zucchini
  • ⅔ cup vegetable oil
  • 1 cup white sugar
  • 2 eggs, beaten
  • 2 teaspoons vanilla extract ½ cup semisweet chocolate chips
  1. Preheat the oven to 350°F.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, stir together zucchini, vegetable oil, white sugar, eggs, and vanilla extract.
  4. Add the flour mixture to the zucchini mixture and mix together until just combined. Stir in chocolate chips.
  5. Scoop into greased muffin tins and bake for about 20-25 minutes at 350°F.
